Blackbread (no flour bread) recipe

I've been asked for the recipe of the german blackbread. It is from a german webside...

Blackbread:

first Step:
100g sourdough
4 cups warm water
250g cracked wheat
750g course rye meal

stirr all together, cover with cling wrap, that it couln't dry out and let sit over night at room temperature. 

step 2:
Next day stir it well, take 100g of the dough (now all sourdough) and put it in the fridge or freezer,
it is now the sourdough for next time...

step 3:
put the rest from step1 into a big bowl, add
375 (- 500ml) warm water
30g salt
1/2 c. molasses
250g cracked wheat
750g course rye meal
optional: 1c. sunflowerseeds and flax seeds
stirr all together

step 4:
pour the dough in 2 (or 3) loaf pans, cover with aluminium foil and let stay for 2 hours at room temperature.

step 5:
bake at 160°C for 90 min. with the alu foil, remove the foil
and bake for more 40 min. without the foil 
(more or less bakingtime depens on how dark you like it)

step 6:
take the bread out of pan and let cool for a few hours before cuting and enjoying :)

Hope you take a try. This bread is really different then the amerikan/canadien ones!!!
